StoviesA traditional Scottish dish incorporating potatoes, meat and onions.Preparation & Cook Time:Serves:4Ingredients:2kg Potatoes 2 large onions 100g butter, lard or meet dripping Salt & pepper 1/2 litre of stock 500g mince, meat or corned beef Chopped parsley for garnishMethod:Peel and slice the potatoes and onions. Melt the fat in a large, heavy saucepan. Fry the onion slightly, then add the potatoes. Season with salt & pepper. Poor over the stock. Bring to the boil. Cover with a tight fitting lid. Simmer gently for 1 hour, stir occasionally. Add the left over meat and cook for a further 10 minutes. Garnish with parsley and serve hot.
